A little while ago, we were tipped off that lentil soup could be much improved with the involvement of coconut milk and over the past few days we have been giving it a go. And it so happened that we had some smoked mackerel, bought in the margins of the white fish purchase noticed at reference 1.
So for round one, BH made some vegetarian lentil soup, involving lentils, coconut milk and various other matters. Which we took followed by a spot of smoked mackerel with salad.
Then for round two, using the left-overs, it occurred to me that one might flake what was left of the mackerel into what was left of the soup. The result being a creamy, off-white soup. BH not too sure about this, but I thought that it worked out pretty well, with a nicely fishy flavour, not too strong.
Just the remains of the salad to tidy up now.
PS: it was also an opportunity to use Powerpoint's useful 'remove background' feature. It worked rather well on the tin, just needing the rims top and bottom adding back in. You can tell, but you do have to look.
