BH converted the small tub of damsons reported at reference 1 into a pie for lunch yesterday. Short crust pastry on top but not bottom, cooked for an hour or more at a fairly low temperature.
The damsons released far more water than I had expected, making the inside of the pie properly damp. With hot custard, just the ticket. A strong flavour, but rather good. BH, as is her custom, took rather more custard.
Next stop the large tub.
